A style that’s completely their own, Clos Cibonne combines the use of the rare grape Tibouren with a special aging process, in which the finished wine is aged under fleurette (a thin veil of yeast) in 100-year-old foudres (large barrels). A beautiful salmon color invites you into the glass with subtle aromas of grapefruit peel, rose petal, and lemon balm. On the palate, the wine is bone dry and crisp with a savoriness that demands a bite of food.
